Vegetable Casserole


A red or green pepper, seeded
6 tomatoes sherry
salt and freshly ground pepper
1 eggplant
2 potatoes, peeled
1 leek
1 zucchini
1/4 stick butter
1 onion, chopped
1 cup beef stock or water
hot sandwiches to serve
1 carrot, peeled
1/4 kg.  Beef Chuck
1 teaspoon oregano

Preparation method

Chop the potatoes, tomatoes, carrots, eggplant, leeks, red pepper and zucchini.

Heat the butter in a large saucepan. Add meat and onion and cook for 10 minutes.

Add the prepared vegetables, stock, and oregano. Cover and cook over medium heat for 30 minutes. Once cooked, season to taste and serve hot with biscuits.
