1 tablespoon olive oil
2 cloves garlic, minced
1 (6 ounce) package frozen cut okra
1 small yellow onion, chopped
One (16-ounce) package frozen bell pepper strips
1 turkey legs (about 1 pound), skin removed
1 cup frozen corn
1 (28-oz) diced tomatoes with juice
1 cup cooked brown rice
Hot sauce to taste
Salt and pepper to taste

Preparation method

Heat the oil in a large pot over medium heat. Add the garlic and onion and cook, stirring occasionally, until softened, about 5 minutes. Add the peppers, okra, corn and tomatoes and mix well. Turkey leg and nestle the pot boiling. Cover, reduce heat and simmer, stirring occasionally, until Turkey readily gets the bone, about 1 1 / 2 hours. Remove the turkey legs, remove the bone and then shred meat and return to pot. Stir in rice, salt, pepper and hot sauce and cook for about 10 minutes.
