Tropical Fruit Salsa Prep Time: 30 min

Ingredients

  • 1 medium mango, chopped
  • 1 medium carambola (star fruit), chopped
  • 1 medium tomato, seeded and chopped
  • 3/4 cup chopped, seeded cucumber
  • 1/2 cup finely chopped onion
  • 1/2 of a medium green sweet pepper, chopped
  • 1/2 of a medium red sweet pepper, chopped
  • 1/2 of a medium yellow sweet pepper, chopped
  • 2Tbsp. snipped fresh cilantro 2Tbsp. lime juice
  • 1Tbsp. sugar 1 to 2 fresh habanero or Scotch bonnet peppers, seeded and finely chopped* (1 to 3 teaspoons)
  • 1tsp. salt

Directions

In medium bowl stir together mango, carambola, tomato, cucumber, onion, sweet peppers, cilantro, lime juice, sugar, habanero or Scotch bonnet peppers, and salt. Cover and refrigerate for 6 to 24 hours. Makes about 4 cups.
