The Goat Cheese And Zucchini Frittata
Ingredients
2 eggs
1 / 2 medium zucchini, thinly sliced
1 tablespoon extra virgin olive oil
A few thin slices of red onion
1 roasted red peppers from a jar, chopped
1 oz fresh goat cheese
Salt and pepper to taste
Small handful of fresh herbs like parsley and chives, coarsely chopped
Preparation method
Beat eggs and season well. Heat oil in a small cast iron or other ovenproof skillet and fry the onion and zucchini 2 to 3 minutes to soften. Add eggs and cook 1-2 minutes until almost set. Sprinkle with goat cheese and roasted red peppers, then sprinkle with herbs. Place under broiler until golden, 2-3 minutes.
