1 tablespoon olive oil
1 1 / 2 pound chorizo (or other smoked sausage), diced or shredded into 1/2-inch pieces
1 cup chopped onion
1 / 2 cup red bell pepper, diced
1 / 2 cup chopped green pepper
8 ounces mushrooms button, quartered
2 tablespoons tomato paste
1 tablespoon garlic, minced
2 cups chicken broth
1 tablespoon marjoram leaves
2 (28 ounce) cans whole tomatoes, chopped and juice reserved
1 1 / 2 c. teaspoon salt

Preparation method

4 / 4 Place saucepan over medium-high heat and add olive oil. When hot, add the sausages in a pan and cook, stirring occasionally, until well caramelized, about 5 minutes. Add the mushrooms onions and peppers in a pan and cook for 7-8 minutes. Add the garlic and tomato paste to the pan and saute 1 minute. Add the chopped tomatoes, juice, chicken broth, marjoram and pan, and season with salt. Bring to a boil, reduce heat to simmer and cook until flavors blend, about 20 minutes.
