Ingredients

Cranberry or pinto beans 2 cups
2 c. teaspoon salt
6 cups water
8 tablespoons olive oil
2 medium onions
1 teaspoon sugar
6 cloves of garlic
Size 1 medium lemon
2 large carrots
Potatoes 1 large
Tomato paste 1 tablespoon
3-4 sprigs parsley

Preparation method

Soak the beans overnight with 2 cups of water. Cook 2 cups water in a saucepan for 25 minutes, drain. Set aside. Saute chopped onion in oil for 2-3 minutes in a large saucepan, stirring constantly. Add tomato paste and mix well. Season with salt and sugar. Stir in beans, carrots peeled and diced potatoes, garlic, cut into 2-3 pieces crosswise, mix well. Add 1 cup hot water. Cover and simmer for 20 minutes or until vegetables are tender. Remove from heat, cold. Put in a dish. Garnish with parsley. Serve cold with lemon wedges.
