1 kg. purslane
2 medium onions
250 gr. minced beef
3 tablespoons butter
2 large tomatoes
3 ½ cups hot water
1 teaspoon salt
2 tablespoons rice

Preparation method

Remove the roots and discolored leaves of the purslane.  Wash well several times, drain and cut into pieces 3-5 cm long.
Dice the onion.  Pick over, wash and drain the rice.
Melt the butter in a saucepan, and fry the onions until softened.  Add the minced beef and stir until colored.  Grate the tomatoes, add to the meat, and stir over the heat for a few minutes.  Add the water, purslane and salt, and bring to the boil over a high heat.  Lower the heat, cover and cook for about 10 minutes.  Stir in the rice and cook until the grains are tender.
Serve hot.
