1 cup butter, softened
Sugar 1 / 2 cup confectioners’
Poppy seeds 1 / 4 cup
1 vanilla extract
2 cups all-purpose flour
1 / 2 cup confectioners’ sugar, or as needed
Preheat oven to 400 degrees F (200 degrees C). Cream the butter and icing sugar half a cup ‘in a bowl until smooth. Mix the poppy seeds and vanilla extract. Mix the flour until just set. Roll 1 inch balls of dough and place 1 inch apart on ungreased baking sheets. Bake in preheated oven until lightly browned, 8 to 10 minutes. Remove from pan to cool slightly, then roll the warm cookies in the remaining sugar 1 / 2 cup confectioners’ coating. Cool completely on wire rack, then roll in sugar again.
