Macaroni And Cheese And Jalapeño
8 oz macaroni, ditalini, penne or similar small
3 tablespoons flour
1 1 / 2 cups of half and half or whole milk
4 tablespoons butter
1 package (about 5 ounces) Boursin cheese, garlic and herbs, pepper, taste, or roasted peppers
1 can (4 oz) diced jalapeno peppers, undrained, or less, as desired
salt and pepper to taste
8 ounces sharp cheddar cheese
1 cup fresh breadcrumbs end
2 tablespoons melted butter
Grease baking pan 2 / 4. Preheat oven to 350 degrees.
Cook pasta in boiling water following package directions. Drain and rinse; reserved.
In a medium saucepan over medium-low heat, melt butter. Add flour and cook, stirring, until smooth and fluffy. Add milk or half and half and Boursin. Cook, stirring, until heated through and thickened. Add cheese and peppers. Cook, stirring, until cheese is melted. Salt and pepper to taste. Combine the sauce with the pasta and mix well. Pour into prepared pan.
Mix melted butter and bread crumbs together and sprinkle over casserole. Bake for about 25 minutes or until bubbling and lightly browned.
