Lemon Curd Bars
1 cup butter
1 / 2 cup almonds, toasted and chopped
1 cup white sugar
2 / 3 of coconut flakes
1 / 2 teaspoon baking soda
2 cups all-purpose flour
1 (10 ounce) jar of lemon curd
Preheat oven to 375 degrees F (190 degrees C).
In a bowl cream the butter in a large size. Add flour, sugar and baking soda. Stir until the mixture forms coarse crumbs
Pat 2 / 3 of mixture in bottom of 9×13 inch baking pan. Bake at 375 degrees F (190 degrees C) for 10 minutes. Remove and cool slightly.
Lemon Curd spread over baked layer. For the remaining 1 / 3 mixture Add coconut and almonds. Sprinkle with lemon curd.
Lower the oven temperature to 350 degrees F (175 ° C). Bar cook for 25 minutes or until golden brown.
