1 1 / 3 cup sugar
2 eggs
2 egg whites
1 cup all-purpose flour
1 / 2 cup unsweetened apple juice
1 / 3 cup canola oil
1 teaspoon salt
1 cup whole wheat flour
1 1 / 2 teaspoons baking soda
1 / 4 teaspoon ground cloves

1 / 2 cup golden raisins
1 teaspoon cinnamon
1 / 2 teaspoon ground allspice
1 / 4 cup chopped walnuts
3 cups grated carrots
1 / 2 teaspoon vanilla
6 ounces cream cheese, reduced fat
A tablespoon of butter or margarine, softened
3 cups confectioners’ sugar
3 tablespoons shredded coconut, toasted

Preparation method

In a bowl, combine first five ingredients until smooth. Mix flour, baking soda, salt and spices, add to egg mixture and mix well. Add carrots and raisins. Pour the mixture into a 13-in. x 9-in. x 2. Cover pan with cooking spray. Bake at 350 degrees F for 30-35 minutes or until toothpick inserted in center comes out clean. Cool on wire rack.

For frosting, in a bowl, beat cream cheese, butter and vanilla until smooth. Add the sugar. Frost the cake. Sprinkle nuts and coconut. Refrigerate.
