2 pounds boneless lamb, cut in 1-inch pieces
2 cups sliced potatoes
1 cup converted rice
2 onions, sliced
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon ground cumin
1 pound zucchini, sliced
1 12-oz pkg artichoke hearts, thawed,halved
2 cups diced tomatoes

Preparation method

Place sliced potatoes in the bottom of a slow cooker. Layer remaining ingredients on top. Pour 2 cups of water (or broth) over all. Cover and cook on low 8 to 10 hours.
