Chicken Pie


2 Pounds Chicken – diced
Basil 1/2 cup – finely chopped
1 stick unsalted butter – melted
3 large tomatoes – finely chopped
1 cup parsley – chopped
Filo dough 1 pound
3 tablespoons olive oil
3 large onions – chopped
2 cloves garlic – minced
3 sprigs thyme
Salt and pepper – to taste
1 cup water

Preparation method

Brown chicken on all sides in olive oil. Add onion and garlic, cook for 8 minutes. Add the thyme, tomatoes, salt, pepper and water. Cover and simmer for 20 minutes. The sauce should be thick, but if the wet boiling until it thickens. Remove the thyme sprigs and discard. Stir in parsley and basil. Set aside. Fold the filo pastry and using a single sheet, place some stuffing in the edge of the dough and fold into triangle shape. Place seam down on a baking sheet and bake at 375 degrees until light brown, or about 20 minutes.
