4 tablespoons butter, at room temperature
1 1 / 2 pounds fresh broccoli
1 carrot, chopped
1 large onion, chopped
3 tablespoons all-purpose flour
Cream 1 / 2 cup
4 cups chicken broth, low sodium
Pieces of homemade bread, recipe follows
Salt and freshly ground black pepper

Preparation method

Melt 4 tablespoons of butter, heavy pot over medium-high average. Add broccoli, onion, carrot, salt and pepper and cook until the onion is transparent, about 6 minutes. Add flour and cook for 1 minute, until the flour reaches a blonde color. Add broth and bring to a boil. Simmer uncovered until broccoli is tender, about 15 minutes. Pour the cream. With an immersion blender, puree the soup. Salt and pepper to taste, then put the lid on. Serve hot with
