Banana Bread

Ingredients

75 ml / 3 fl oz vegetable oil
225 g / 8 oz mashed ripe bananas (about 3 medium)
½ teaspoon vanilla essence
3 medium eggs
315 g / 11½ oz Betty Crocker Bisquick All Purpose Baking Mix
175 g / 6 oz caster sugar
50 g / 2 oz chopped nuts

Preparation method

Preheat oven to 180°C*/350°F/Gas Mark 4.
Grease a 23×12.5×7.5cm (9″x5″x3″) loaf tin and line the base and short sides with a strip of greased, greaseproof paper.
Mix all the ingredients in a bowl with a fork and beat vigorously for 1 minute.
Pour the mixture into the prepared tin and bake for 55 to 65 minutes or until a cocktail stick inserted into the centre comes out clean.
Cool for 5 minutes in the tin. Loosen the cake from the long sides of the tin and lift out onto a cooling wire using the strip of paper. Remove paper and cool.
Cut into slices and spread with butter (optional).
